Greek Chickpea Salad
1 can chick peas, drained and rinsed 6-8 roma tomatoes, chopped 2 cucumbers, chopped 1 red onion, diced 1-200 gram container of feta cheese, chopped Dressing: 1/4 cup olive oil 1/4 cup balsamic vinegar dash of honey
Mix all ingredients together, add dressing to taste. You probably won't need all of it. This will make a fairly large amount, I keep it in the fridge to snack on. It lasts well and gets even better as the dressing soaks in.
